Fast pizza

You know those times when you really would like to have a pizza in front of the tv, but you know pretty well that you cannot simply go in Internet and ask a delivery home?

Well, this is where this fast pizza or calzone recipe originates. The taste is good, not really comparable to a regular pizza, but still good enough to satisfy your hunger for pizza or calzone. A bit like a frozen one… not good as a real thing, but so differently good that you must have it from time to time 😊


Pizza dough

  • 300gr Bread mix (I used 130gr of whole rice flour, 70gr of corn flour, 60 gr of corn starch and 40gr of potato starch)
  • 16gr of cream of tartar based baking powder
  • 125gr of fresh goat cheese
  • 1 glass of water
  • 1 spoon of extra virgin olive oil
  • 3gr salt

  • 1 mozzarella
  • any vegetable you may like to add


In a bowl mix all dry ingredients: flours, salt and baking powder. Weight and have ready the wet ingredients and then put on the stove a round stone pan (if you don’t have one, use a no-stick one) and turn it on. It will only take 2 minutes to have the dough ready, meanwhile the pan will be already hot and ready.

Add now to the dry mix the wet ingredients – the goat cheese, the extra virgin olive oil, the water – and stir with a spoon till you are able to create a ball. The pizza dough will look as the picture below. It will be really soft, but not sticky.

Put a bit of flour (rice will be perfect) on an even surface and roll the dough with a rolling pin. Then transfer the dough into the pan paying attention not to get burned.

To make the transfer easy I usually roll the dough on a piece of parchment paper and then turn it upside down on the pan. Otherwise, I shape the dough with my hands and no flour directly in the pan. The risk to get burned, if you are not used to it is high, so please be careful, if you decide to go this way.

When the pizza is not sticked anymore to the pan and the upside part is not wet anymore, you can turn it with a spatula and top it with your favorite ingredients! I used in this case only mozzarella and added EVO oil on the plate.

Fold it to get a calzone 😊 you should theoretically fold it before cooking with all ingredients inside. Make sure you cover the pan then, otherwise the dough will not cook properly.
