English scones

Scones anyone? This time we must all thank the husband for this new recipe! Yes, the husband 😊 He woke up in the weekend smiling and asking: shall we have scones for breakfast? Come on! I had no wish to get ready, drive to the only place in Zurich which serves gluten free scones and wait 20 minutes to have them ready… so I welcomed the challenge and put my mind into gears.

You might remember that I posted scones some time ago in my instagram profile. They were American scones (like the one you find in Starbucks), they are more like giant sweet cookies mixed with chocolate, caramel, cranberries and more 😋 On the other hand, the English ones are no sugary at all, and they are perfect with jam (unfortunately no strawberries for me) and clotted cream (which I skipped since I was not prepared for scones).

Normally, I don’t cook with butter and this time was no exception. If you would like a lactose free version, I suggest to substitute milk with water (yes, you read well, water! It is the perfect substitute when milk is not the main ingredient, since it won’t change the taste of your recipe).

Ingredients (all organic for me)

    150gr sorghum flour
    75gr arrowroot flour
    75gr whole rice flour
    8gr baking powder (cream of tartare based)
    1gr salt
    1 spoon of whole cane sugar
    4 spoon of coconut oil
    140gr milk (2% fat) or water for lactose free /milk protein free
    1 egg

Preparation

I a big bowl or on a clean marble surface mix the three flours with the baking powder.

Preheat the oven at 200C degrees.

Make a well in the center of the flour mix, add all other ingredients. With your hands well clean start mixing and taking the flour from the side of the well till you can start knead the dough. After about 2-3 minutes of kneading the dough will be ready!

The consistency will be exactly like its gluten full sister thanks to the arrowroot 😍

Divide the dough in four parts and shape each part as a cylinder around 4 cm high.

Cook in the preheated oven for 20 minutes.

Serve warm with blueberry jam and clotted cream (if you have it) and above all ENJOY! 🤗
