Lemon ice cream

Over the weekend the weather was great and we decided to invite over some friends to enjoy the balcony, the sun and an homemade ice cream. I was not expecting it would be a hit, so I not take proper pictures. I will do some more next time 😉

Ingredients (all organic for me)

  • 300gr of coconut milk (60% coconut or more)
  • 60gr of jam cane sugar
  • 6 drops of cacao butter
  • One lemon
  • 60gr of Water

Preparation

To prepare the ice cream I now use an ice cream maker. You can prepare it as well without one using a blender, but you will need to start the preparation one day earlier. Let me know if you are interested in the recipe.

Grate the peel of one lemon (make sure it is well washed and the peel is edible) and add it to the sugar in a small pot. Put the pot on the stove and add a few drops of water. Then let the sugar melt slowly and bring it to simmer. Jam sugar helps making the ice cream creamy even without egg white and since has apple pectine in it needs to be cooked.

Once it simmers take off the stove and add the drops of cacao butter. Stir it till is melted, add the coconut milk, mix and let it rest for 30 minutes in the fridge.

When cold, add the mix to your ice cream maker and eat as soon it is ready or when you wish!

I have prepared it also in a blueberry or mango version exchanging the lemon peel with 200gr of mango or 100gr of blueberries. All delicious! You can skip the cacao butter, if you don’t have it at home. I like the subtle flavor of chocolate, that I cannot have 😇
